LOS ANGELES (CBS) – As more states move to legalize marijuana, the cannabis industry continues to grow. The culinary community is on the leading edge. Chefs who use THC as a special ingredient are in high demand.
Andrea Drummer is one of those cannabis chefs. She infuses her food with THC, which is the chemical compound in marijuana that gives a euphoric high.
“For me, I believe in proper dosing and responsible dosing, so I often do micro-dosing which is very small levels of THC,” Drummer explained.
She hosts exclusive pop-up dinners in Southern California. The classically trained chef goes beyond baked goods and candy. She creates a more sophisticated experience with her custom strains of oil and butter.
Drummer’s company “Elevation VIP” is a medical marijuana dispensary. It allows her to glaze a quail confit with cannabis blueberry
barbecue sauce, served with forbidden rice.
But not everyone can join the party. You need to have a medical marijuana license to enjoy the THC-infused meal.
California legalized recreational marijuana last year, so technically only the host needs a license, but Drummer said she makes sure all her diners have one.
She’s been entertaining clients from all walks of life for five years. They say they come for the conversation, stay for the food, and savor a gentle high.
“Like most people, my first edible was a brownie. It will throw you off because you get way too high,” said one of Drummer’s diners, B. Stewart. “But in these experiences, you’re educated, and it’s a paced high.”
“And the blending of the flavors is ridiculous,” added Alberto Carbajo-Agrasar.
The high dining experience starts at $200 per person.
Similar cannabis dinners can also be found in states where recreational marijuana is legal, like Colorado and Washington state.
